Fresh zucchini stuffed with ground turkey, cheese & southwest seasonings.

Directions

Cut zucchini in half longways. Cut a thin slice off bottom so zucchini boats will sit flat.

With a spoon scoop out pulp leaving about 1/4 inch shell.

Place shells in a microwave safe dish. Cover and microwave for 2-3 minutes in a 1100 watt microwave until shells are crisp but tender. Drain off any liquid and set aside.

In a large skillet cook turkey over medium heat until no longer pink. Drain and remove from heat. Stir in Salsa, breadcrumbs, cilantro, cumin, chili powder, salt, pepper, and half of the cheese.

Spoon turkey mixture into zucchini boats and top with remaining cheese. Microwave for 2-3 minutes or until cheese is melted. Enjoy!
