Cut zucchini in half longways. Cut a thin slice off bottom so zucchini boats will sit flat.
With a spoon scoop out pulp leaving about 1/4 inch shell.
Place shells in a microwave safe dish. Cover and microwave for 2-3 minutes in a 1100 watt microwave until shells are crisp but tender. Drain off any liquid and set aside.
In a large skillet cook turkey over medium heat until no longer pink. Drain and remove from heat.
Stir in Salsa, bread crumbs, cilantro, cumin, chili powder, salt, pepper, and 1/2 the cheese.
Spoon turkey mixture into zucchini boats and top with remaining cheese. Microwave for 2-3 minutes or until cheese is melted.
